Resident Sommelier – Amy WitzAmy has worked in the Chicago food and wine scene for over 18 years. Growing up in Edison Park, she quickly decided to start her career at the House of Cakes Bakery and realized the need to pursue the challenge of being a chef. Graduating in 2001 from Le Cordon Bleu, formally known as Cooking and Hospitality Institute of Chicago, she quickly became part of the Chicago Restaurant Scene.
Amy has worked at prestigious restaurants including Le Francais and Moto. Quickly being promoted to Sous Chef at Hotel 71 changed her way of thinking. Wine, wine, wine. Distinguishing harmony amidst perfect pairings. Amy decided to transform to front of the house and learn the world of wine. Prior to joining the role as Sommelier at The Hyatt Regency Chicago, Amy assisted with the wine program at the Ritz-Carlton in Naples and held the title of Assistant Sommelier from 2006 to 2009 at The Park Hyatt Chicago overseeing 1500 selections and 10,000-bottle inventory. Amy passed her Sommelier introductory course in 2007 and was certified in 2009. Amy’s current wine program for Hyatt Hotels continues to win Wine Spectator Awards year after year. Amy’s truly denotes her vast passion for wine and demonstrates everlasting perfect pairing with her strong culinary back round.
Amy joined the Balanced Rock Winery Team pre-opening to assist our winemakers in executing our grape to glass philosophy. Amy helps tailor our wines to concerning palates, keeps us in tune to industry trends, conducts staff trainings and hosts several events at the winery throughout the year.
